Ingredients
  • 1 pound summer squash or zucchini squash
  • 1/4 cup fresh herbs chopped
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste
Instructions
  1. Holding the squash lengthwise cut strips or “noodles” with the vegetable peeler, toss with salt and pepper, herbs and olive oil
